Better day…

How could my day not have been better when it started off with this:


After a not-so-great afternoon yesterday I knew I’d need a pick-me-up in the morning… enter: the breakfast cookie!  MMmmm… it hit the spot along with some strawberries and blueberries.

Here’s what went in the lunch bag:


Cheerios for the morning snack.  Lunch was minestrone, cucumber slices with hummus and jell-o.  After school snack was an apple with AB.  I stayed after school for a while and then ran by the library on the way home.  They finally got in my Amazing Adventures of DietGirl Book.  I’m excited to curl up and start reading it!  Once I got home I chowed down on this:


Raspberry yogurt topped with fresh AND frozen blueberries and Kashi Puffed AND GoLean Crunch Cereals.  Then it was time for my weekly date with Jillian.  I’m sticking with Level 2 of the 30 Day Shred for at least a couple more weeks.  My arms/shoulders still can’t take all the planks and I’d really like to do the ‘Natalie’ version of everything before moving on (I’ve been forced to stick with the ‘Anita’ version of the squat thrusts and plank jacks).  As soon as I finished my workout it was time to make dinner:


Spinach salad, piece of WW toast, a fresh steamed veggie mix (zucchini, yellow squash, onions, asparagus), Hamburger Helper Crunchy Taco, and a bean/tomato mix I cooked up on the stove (a can of black beans, a can of ro-tel, a can of diced tomatoes and random spicy spices).  The plate looks like a mess as is, but then I realized how much better the Hamburger Helper was with the addition of the tomato/bean mix, so I ended up just mixing the whole plate together.  It wasn’t pretty, but it was MIGHTY delicious and filling!

After dinner, I was still feeling experimental… so look what I whipped up:


That’s just a piece of WW bread topped with AB and sprinkled with mini chocolate chips and shoved in the toaster oven for a few minutes to make it melty.  An open-faced PB cup sandwich of sorts!  It was SO GOOD!  If only I could use my creative powers for good instead of delicious, delicious evil!  🙂

And no night would be complete without ice cream! 


A microwave chocolate cake topped with PB Co. Dark Chocolate Dreams and a scoop of Breyers No Sugar Added Vanilla.  Now I’m faced with a dilemma… spend my last 1/2 hour before going to bed doing what I SHOULD do (grading papers… seriously… I have a 3 inch stack to deal with because I keep putting it off..) or read my new book and get to bed at a decent time…. Decisions, decisions…

Icky afternoon…

Today has kind of turned into a not-so-great day, so I’m going to keep my post short and get off to bed ASAP.



Two pieces of WW toast (one with AB one with cinnamon/splenda) a Morning Star Breakfast Sausage and some blueberries and strawberries for the ride to work.

In the lunch bag:


Cheerios for a morning snack.  Leftover Lemon-Chicken Penne with Broccoli, an orange, and jell-o for lunch.  No after school snack because I didn’t intend to stay after (even though I ended up staying for over an hour! UGH!).  School was average today, but the icky-ness started this afternoon.  I spoke to my mom and found out she had to go put our 15 year old cat, Bob, to sleep today.  While I know it was the right thing… and it’s not like I’ve lived with them (and consequently Bob) for several years, it still sucks.  It sucks even worse that my mom had to go to the vet on her own… ugh.  Nothing more to say but ugh.  I’ve tried to keep my mind off the situation, but when my mind gets a chance to wander it goes to that. 

I decided I needed to distract myself with a run.  5 miles was on the schedule today… but first, the traditional pre-run fuel:


Oats with 1/2 smashed banana, cinnamon, and Frozen Wild Blueberries.

By the time I got done running, I wasn’t up for anything complicated for dinner:


I had a chicken breast, some frozen veggie/noodle mix that steamed in the bag in the microwave, a sweet potato (with cinnamon!), a salad, some leftover minestrone, and a slice of ‘garlic toast’.

Evening snacks were basic as well:









Another Vitatop muffin stuffed with AB (it was SO good last night I had to have it again) and a Breyers Fat Free French Chocolate Ice Cream Cone. 

I’m off to prep breakfast and lunch for tomorrow and then head to bed.  I’m ready to be done with this evening!

Spring time snow??!?

I woke up this morning to a bit of snow coming down!!  I thought we officially started spring a week ago!  I decided to take advantage of what I hope will be the last sign of a winter morning for the season by grabbing the Sunday paper from the driveway and snuggling up under a blanket with it and a cup of tea:


MMmm… Celestial Seasonings Chocolate Caramel Enchantment Chai… it’s dessert in a teacup! After reading the paper (the hubbie was still in bed), I decided to go play in the kitchen.  I got out our Belgian Waffle Iron (which we’ve used… oh probably 5 times since getting it…), dusted it off, and whipped up a batch of belgian waffles using the recipe on the side of the Bisquick Heart Smart Box (only subbing Unsweetened Vanilla Almond Breeze for the milk, egg beaters for the egg, and applesauce for the oil).  I also whipped up some egg whites for a bit of protein…








The waffles turned out great.  It really made the hubbie and I think back to our first couple years of college… our dorm cafeteria had a Belgian Waffle Maker in it and on Saturday and Sunday mornings we’d go there and they’d have the batter sitting out and waiting and we’d whip up a huge waffle for each of us.  They always had a big bowl of frozen, syrup-y strawberries to top it with too… so when I made my waffles this morning I also sliced up some frozen strawberries and mixed in a little splenda and water to make a similar mix.  It was a great way to start the day!

After our late breakfast the snow was already mostly melting so we ventured out to run a few errands.  We hit up Target (I got more Clif Z-Bars… YAY!), PetCo, and a quick stop by the grocery store (literally… we needed 2 things).  Before we knew it it was lunch time.  I made a wrap.  First I smashed some avocado and mixed it with garlic, salt, and pepper.  I spread some of that on the tortilla and topped it with tomatoes, green bell peppers, cucumbers, onions, and spinach.  I had a few pickles on the side as well as some leftover minestrone soup and some Jello for dessert.  It was a nice lunch.








After lunch I spent some time going through the mail, paying bills, avoiding doing work for school… I even tried having a snack to distract me!


But eventually I knew I had to get down to business.  I’d say I spent about an hour or so planning… just long enough to get enough done to keep my head above water for a few more days.  I just couldn’t bring myself to keep working so that I could actually get ahead.  The day was just going by too fast!  Before I knew it… it was time for dinner. 


That’s the last of the TJ’s Curry Chicken/frozen veggies/rice mix you’ll see for a while.  I still have a few more servings in the freezer… but I’m done with it for at least a few weeks. 

Now, it’s riddle time: how do you make something like a Triple Chocolate Vitatop (something that’s totally wonderful all on it’s own) totally, insanely, 10 kinds of fabulous delicious-ness?


You chop it open and smoosh some homemade AB inside!!!  I know it’s an ugly picture… but it was oh-so-yummy to consume!  Seriously, is there anything in this world that couldn’t be made better with a little homemade almond butter???  I haven’t found anything yet!

And you know my night wouldn’t be complete without some ice cream!  There’s nothing better than a sundae on a Sunday!


Just a little Breyers No Sugar Added Vanilla topped with caramel syrup and M&Ms.  What can I say, some people need a warm glass of milk, I need a little ice cream to get ready for bed!  Time to get ready to face another week!

All about running today!

I woke up this morning and bummed around a while reading blogs, doing laundry, and eating this:







A piece of WW toast topped with a couple slices if Oscar Mayer Shaved Ham, a microwaved egg white, and a slice of Kraft Fat Free Sharp Cheddar Cheese.  I also had a bowl of yogurt, Kashi Puffed Cereal, a kiwi, strawberries and blueberries.  It was SO fresh and delicious… you may be seeing this bowl again tomorrow!

After breakfast it was time to get down to business.  I’m 3 weeks away from my half marathon, which means I’m 3 weeks away from being finished with my current training program.  It’s high time I start looking into what I want to do next in preparation for the marathon in the fall.  So I dragged out my various marathon/running books, opened up the runnersworld and hal higdon websites and got to work trying to figure out what to do for my training.  You see, I need to have my training schedule planned out in advance… if I just let myself randomly decide what to run each week I’d get lazy (plus, I’m one of those dorky people that LOVES to plan things).  I’m a very picky runner, however, and had very specific things I was looking for in a running program: 4 days a week, longest long run of at least 24 miles, starts with about 26 miles per week (because that’s where I’ll be in a few weeks and I don’t want to backtrack!), need to be able to easily stretch it out to fill the 25 weeks I’ll have to get ready for Chicago…  basically I knew I was going to have to modify and existing plan, it was just about deciding which one (or which two to combine).  I bounced around between Higdon’s Novice and Intermediate… then runnersworld smart coach recommendations… then back to Higdon… finally, after staring at Higdon’s programs long enough, I figured out his pattern for increasing mileage and came up with a hybrid of his 2 novice programs that meets all my needs.  I’ll get it posted on my gmail calendar in the next couple of weeks so that you can go to my workout schedule and check it out if you’re interested.

So, the good news is I can check that off my to-do list.  The bad news is I messed around with it well into the afternoon.  Before I knew it, it was 1:30 before I was eating my pre-run oats!


I’m really starting to LOVE mixing in half a smashed banana into my oats.  Today it was just that with frozen wild blueberries and cinnamon… but the banana flavor totally enhances the cinnamon flavor… it lingers in the background and ups the delicious-ness factor a TON!  I may have to start mashing in some banana on a regular basis and not just on long run days!

Today I had to cover 12.25 miles and it’s been raining ALL DAY, so I got to do the whole thing on my treadmill (poor thing… it got a workout today too!).  I watched a TiVoed episode of Grey’s Anatomy and this past week’s Biggest Loser and munched on some frozen grapes for fuel during the last 6 miles or so…








After my run and LOTS of stretching I had  bowl of mixed berry yogurt topped with Kashi Puffed and GoLean Crunch Cereals and chopped frozen strawberries to refuel.  Then, I pulled up a new recipe to try for dinner: Lemon Chicken Rigatoni with Broccoli (courtesy of Betty Crocker online).  I of course modified it based on what we had in the house (penne instead of rigatoni, etc.) and by adding spices and whatnot to suit our tastes…. I liked it, but the hubbie “doesn’t like lemon on pasta”.  So he didn’t eat much of it.  Which means you’ll be seeing lots of this over the coming days as I consume the large amount of leftovers:








I also had a spinach salad, piece of garlic toast, and a cup of leftover Minestrone from last night.  I spent the remainder of the evening showering, reading, wasting time online, doing  thinking about how I should be doing some planning for school (there’s always tomorrow… right?), and snacking on various sugar filled items to fulfill my calories needed for the day (long run days I always try to consume a few extra hundred to make up for the ton I burn… if nothing else it’s a good excuse to eat candy!):

 I had a small cup of Kashi Sunshine Cereal mixed with Peanut Butter Cap’n Crunch and a bit of Unsweetened Original Almond Breeze, a 100 calorie Milky Way Bar, and some Breyer’s No Sugar Added Vanilla Ice Cream topped with homemade AB (not all at once… I spread it out throughout the evening!).

On the to-do list for tomorrow… a possible trip to Target and Petco, laundry, a short yoga session, planning and grading for work, and hanging out with the hubbie!

Today has been a good day food-wise (and rest of the world-wise… you can’t go wrong on a Friday!).  I started my day by trying a new breakfast food I’d read a bit about… a simplified version of muesli!








Last night I mixed 1/3 c. oats, 1/3 c. plain yogurt, 1/3 c. unsweetened original almond breeze, 1 tsp. unsweetened cocoa powder, and 1 or 2 packets of sweetener together and popped it in the fridge.  This morning I added another sweetener (still needed some more to balance out the bitter cocoa) and strawberries before I dug in.  I REALLY enjoyed this!  I definitely see it getting into the rotation more often as the weather gets warmer!  YAY for another breakfast option!

Here’s the morning snack and lunch:


Cheerios, a leftover chicken/veggie kabob from Sunday (de-kabobed for ease of packing), cucumber slices with Tribe Sweet Bell Pepper Hummus, a slice of WW bread (which I toasted) and a slice of american cheese for the top (which I nuked for a toasted cheese sandwhich… kindof), and jello!

 I actually left right after school today and ran to Walmart.  Besides stocking up on a couple of items that are just always cheaper at Walmart than anywhere else, I got myself a new toy: a mandolin slicer.  It was under $10 and I bought it with the intent of using it to make oven baked french fries (hence the blog title… cheesey I know).  I was VERY excited to try it out… but that had to wait until dinner.  I had a run to do today and that meant running fuel and that means oatmeal!


Pretty simple mix here… a little cinnamon, Frozen Wild Blueberries and frozen Raspberries mixed in.  After I ate my oatmeal I conked out on the couch for about a half hour before getting up and doing my 2.75 mile tempo run.  Then it was time to make dinner and play with my new toy.  Now normally slicing up a sweet potato for fries takes FOR-E-VER!  But thanks to my new best friend (i *heart* you mandolin slicer) I had 2 potatoes sliced up before my oven was even finished preheating!  Guess who’s going to be having homemade fries a LOT more often?  I’ll tell you who… this gal right here (how big of a loser am I?  A kitchen tool makes my day…)!








Dinner was a Boca Spicy Chik’n Patty on WW Bun, sweet potato fries, salad, and a cup of Bear Creek Minestrone soup (a bag mix that you just add water to… but I also bulked it up with a broccoli/cauliflower/carrot frozen veggie mix).

After talking to my mom on the phone for a while, the evening snacking and blog reading commenced (another wild and crazy night for me!)

First was the predictable snack plate of apples with cinnamon and AB and Cookie Crisp Cereal… then a Banana Bread Muffin from the freezer.








Finally, what’s a night without ice cream?  I’m currently sucking down this fun little treat:

Breyers No Sugar Added Vanilla Ice Cream and a microwave chocolate cake with AB on top.  I think I may spend some time trying to pick out a marathon training plan tonight.  Maybe listen to a Jillian Michaels Podcast.  I’ll almost certainly fall asleep by midnight… it’s been a long week!  Is it wrong that I’m SO happy to have a boring and lame quiet and relaxing Friday night at home?  Well, if it is, I don’t think I wanna be right!  Good night!

Loooonnnngggg Day…

I started my long day off with a bowl of Kashi Puffed Cereal topped with some plain yogurt and strawberries:


And here’s how the lunch and various snacks shaped up:


Morning Snack: Cheerios.  Lunch:  Leftover Spicy Peanut Noodles with Tofu and Broccoli (last bit of this… I WILL be making it again!!)  Various afternoon snacks: cucumber slices with tzatziki, apple, pretzels, 4 pack of vanilla cookies.

The reason for all the afternoon snacks was that I stayed after work until 3:30 and then went to a training session about the new toy I got for my classroom (promethean board).  The training session lasted until 6 (I snuck out 15 minutes early… SSHH!  Don’t tell anyone!).  On my way home I stopped by Shop N Save because it’s $10 off your $50 purchase Thursday (plus I needed some things I can only find there).  By the time I got home it was 7 and the hubbie was on his way home for dinner.  I whipped up some leftovers:


I know you saw a VERY similar pic a few days ago… this is that mix of Trader Joe’s Curry Chicken, rice, quinoa, and random frozen veggies… AGAIN (what can I say, it made a TON of food!)… along with a Kahiki Vegetable Egg roll and a spinach salad.

After dinner I caught up on my emails and blogs for while while munching on a banana with AB and eventually sucking down a shake of sorts:









I  modeled the shake after Hungry-Girl’s Cookie Crisp Shake.  I used a Jello Sugar Free Chocolate pudding, some cookie crisp cereal, a few chocolate chips and some Unsweetened Original Almond Breeze.  It was alright.  Definitely chocolate-y!  I prefer the peanut butter chocolate one I made last week though…

Now I’m off to prep breakfast and lunch for tomorrow (TGIF!!!).  Then I’m going to try and squeeze in a 20 minute yoga session before bed.  I didn’t get to do that the other night like I wanted.  I better get movin’ if I want to be able to tonight!

Over the Hump!

Well, I tried something new for breakfast this morning: Whole Grain Cream of Wheat.  I added a little cinnamon and frozen blueberries to it just like I do my oatmeal… it did NOT look appetizing…


It wasn’t my favorite but it wasn’t bad, but I DEFINITELY prefer oatmeal.  I also had a Morning Star Breakfast Sausage Link and some sliced strawberries in the car!

There’s not much to see from what I packed for school because it’s all packaged up!


Morning Snack = Cheerios

Lunch= Assembled at work: WW Tortilla with chopped tomatoes, garlic, onions, salt, pepper… a few slices of chicken… a slice of american cheese… and some spinach all zapped to melty goodness in the microwave.  Side of leftover grilled veggies and Jello!

Afternoon Snack: Cucumbers with Tzatziki

After school I ran a few errands: stopped at the library and Walgreens.  When I got home, it was snacktime!  After my less than stellar experience with Cream of Wheat this morning, I returned to an old friend for pre-run fuel:


Oats with 1/2 TBS Unsweetened Cocoa powder, a little sweetener, and chopped frozen strawberries.  Mmmm… dessert-y oatmeal is the best!

As soon as my tummy was done digesting the oats I hopped on the treadmill and did my 5 mile run.  I could’ve probably run outside, but I was in the mood to mindlessly watch TV.  Before I knew it, it was 7:00 and time for dinner so I made a quick dinner of a Birds-eye Steamfresh Complete Meal for Two (Grilled Chicken Marinara Flavor).  All you have to do is throw it in the microwave to for 10 minutes… it’s perfect when I need dinner- FAST!  I bulked it up with some extra pasta (and some extra onions in mine!).  Of course I also had my garlic toast and spinach salad.


After dinner I worked for a little while on entering grades online and munched on a snack plate while I did…


Sliced apple with some cinnamon and AB.  I also found some cute little 4 packs of creme cookies at Walgreens.  They’re only 40 calories for a 4 pack of cookies (YAY for portion control!).  The cookies ARE on the small side and they’re not the greatest things I’ve ever tasted, but for 40 calories they can scratch a minor cookie itch!  I know what you’re thinking… there are only 3 cookies on the plate!  Would you believe one of the cookies jumped into my mouth before I could snap it’s picture?  😉

Now I’m digging into a nice pre-shower/pre-bedtime treat: an ice cream cone!
